Poutine, for the curious, is a dish made of 3 ingredients: fries, brown gravy (usually either a mix of beef/chicken stock or a veal base) and fresh squeaky cheese curds. While all the ingredients are pretty critical, the cheese is usually the hardest to get right if you don’t have it readily available. Halloumi is an acceptable alternative though, even if it doesn’t quite have the right texture. Serve very hot and eat before it congeals into a disgusting mess!
